rio_grande_restaurantThe Rio Grande Mexican Restaurant in Boulder or as we simply like to call it “The RIO” has been a main staple in Boulder for over 20 years.  It was originally located on East Pearl, but migrated to the old Piccolo Pete’s space and has been a fixture at the corner of Walnut and 11th ever since.  If you are visiting Boulder for the first time the RIO is a must visit, but keep in mind there truly is a reason why you are only allowed to have three margaritas.  I fondly remember the night I chose to have four margaritas and when I say “remember” I use the term loosely.  The food is good, a 7 on the 1 to 10 scale and reasonably priced.  But it is the Margaritas that will keep you coming back.

A great evening for Cyndy and I is to hop
